Punjabi Cuisine
The local cuisine of Punjab is heavily influenced by the agriculture and farming lifestyle prevalent from the times of the ancient Indus Valley civilization. Dishes similar to tandoori chicken may have existed during the Harappan civilization during the Bronze Age of India. According to the archeologist Professor Vasant Shinde, the earliest evidence for a dish similar to tandoori chicken can be found in the Harappan civilization and dates back to 3000 BC.
Punjabi cuisine is known for its rich, flavorful, and hearty dishes, often made with bold spices, creamy textures, and a generous use of ghee or butter. Some of the most popular Punjabi dishes include Sarson da Saag and Makki di Roti, Butter Chicken, Chole Bhature, and Dal Makhani. The cuisine features a variety of bread such as Naan, Paratha, and Kulcha, often served with thick gravies or spiced vegetables. Dairy products like paneer, yogurt, and lassi play a significant role in Punjabi meals, adding richness and depth to the flavors. Whether it is the smoky tandoori dishes or the slow-cooked curries, Punjabi food is a celebration of robust flavors and culinary traditions passed down through generations.
